Wilmer Cubilos - Colombia, Friedhats | 250g

Wilmer is a bigggg Tabi guy, and when you brew up a cup of this coffee I’m sure you will be too. We tasted both his washed and anaerobic Tabis and decided we needed them both, so I guess we’re big Tabi people now too. Tabi is a hybrid variety created by CENICAFE, crossing Typica, Bourbon, and Timor. In breeding this, it was hoped to merge the rust resistance and cup quality of the parents, and as an added bonus it can be grown at high altitudes in high density- what’s not to like? As a matter of fact, the word “tabi” from which the variety gets its name is Gumbiano for “good,” which reminds me of when I spend 3 hours cooking for my partner for them to say “yeah it’s good” and I absolutely crash out. Good? Is that all you think of me? Of the blood, sweat, tears and LOVE that I made this with? Good. Sure. Yeah. No, I’m fine.
